THE MAPLE SYRUP IS USED FROM US BUT GISELLE ACTUALLY COOKS IT DOWN MORE TO CRYSTALIZE IT THEN ADDS IT TO THE ICE CREAM.
GISELLE MAKES HER OWN EVAPORATED MILK USING THE GUERNSEY COW MILK AS THIS IS ANOTHER ADDED INGRIDIENT THAT IS USED WHEN MAKING THE ICECREAM
THE TEXTURE OF New York ICECREAM GALLERY'S VANILLA,CHOCOLATE AND MINT IS MORE LIKE AN "ICE-MILK" TYPE ICECREAM.

I LIKE IT ESPECIALLY WHEN LEFT AT ROOM TEMPERATURE FOR 5 MINUTES THEN WHIPPING IT WITH MY SPOON INTO A GELATO TEXTURE.
PLEASE NOTE THAT MOSTLY ALL RAW MILK ICECREAM MADE FROM RAW MILK AND CREAM IS REALLY SUPER HARD WHEN FROZEN.IM STILL NOT SURE WHY I HAVE BEEN TRYING TO FIGURE THIS ONE OUT CAUSE THE ORGANIC ONE IN THE STORE HAS JUST CREAM ,EGGS YOKES,MILK THATS IT. AND THAT ONE IS SOFTER.IT MUST BE THE TEXTURE OF THE RAW GRASS FED FRESH CREAM AND MILK IM NOT SURE.
BUT THOSE 2-5 MINUTES WAITING TIME OF THAWING OUT ARE DEFINITLEY WORTH THE WAIT !!!
